Sweet and Delicious - How to make Pancakes

I can say that every kid loves pancake. my little nephew after tasting the one I made once actually asked to go and buy the items for another production. It's time to get colorful, crafty and a little messy with your kids as you make a pancake breakfast together. Don’t forget savoury pancakes are traditional too! Pancakes can be a great way to get some much needed veg and fish into little peoples’ diets.

If you have the kind of nephew as mine, I think you need to be a bit careful, because this one loves action around anything he loves. so I will advice that you keep in mind that because a hot griddle is used when making pancakes, any child who will be assisting in the cooking part of the process should be able to take good direction from adults, have a solid understanding of the dangers of hot surfaces and have well-developed fine motor control for pouring batter onto the griddle and flipping pancakes with a spatula.

INGREDIENT

This is based on your family size or those available to eat, off course no one wants to eat cold pancakes. so for this recipe I just made a small one with 2 cups of flour.

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1-1/2 cups milk
  • 1/2 cup shortening or butter, melted
  • 2 teaspoons vanilla extract

METHOD

Sieve the flour into a large bowl
Using a whisk beat the egg, milk and oil together in a jug
Pour the milk and egg mixture into the flour and whisk until smooth
Heat a little oil in a suitable pan
Pour in roughly 2 tablespoons of batter and coat the base of the pan
Cook for approx. 2-3 minutes or until the base of the pancake turns golden brown
Flip the pancake and cook for another 2 minutes on the other side

Keep the pancakes warm in the oven until they are ready to be served!

Remember you can also freeze these pancakes!

Enjoy!
